Fruit Cocktail Cake 

Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish. 

In a large bowl, mix together flour, sugar, baking soda, and salt. 

Stir in the fruit cocktail (with juice), eggs, and vanilla extract until well combined. If desired, add chopped nuts and shredded coconut. 

Pour the batter into the prepared baking dish, spreading it evenly. 

In a saucepan, combine brown sugar, butter, and evaporated milk. Bring to a boil over medium heat, stirring constantly. Once it starts boiling, let it boil for 2 minutes, continuing to stir. 

Pour the topping mixture over the batter in the baking dish. 

Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
